Simply Broasted Bird

6 whole doves (preferably plucked) 6 slices bacon 1 T. butter or margarine 1/4 C. lemon juice 1/2 C. hot water 1/3 C. mushrooms-chopped 1/2 C. Onion – chopped Toast or Rice & Gravy

Bacon wrap each bird, securing with skewers or toothpick. Place wrapped Doves in shallow, buttered baking dish or pan. Cover & bake @350, 30 mins. basting every 10 mins. with Lemon juice-water mix. Remove from oven when birds are tender. Sautee onion-mushroom mix & top birds with mixture. Serve on toast or with rice & gravy. Wade Ellis likes to put a slice of Jalapeno inside each bird, prior to wrapping with bacon, for added accent. Momma liked to season her Doves with Poultry seasoning prior to baking. Dare to add your own touch!!!
