Guess what the top three vegetables in America are? If you guessed lettuce, potatoes and tomatoes, you are right. Lettuce ranks third behind potatoes and tomatoes for popularity. We need 3 cups of vegetables daily. What is an easy way to get the 3 cups of vegetables? A nice big salad can count as two to three cups of vegetables we need daily. What's the bad news? Unfortunately, iceberg lettuce is often found in salads. Nutritionally, iceberg is not at the top of the list. To boost the nutrition in a salad choose dark colored greens. The darker the green in salad greens, the more nutrients it has. Popular varieties, such as Romaine, Bibb and Boston lettuce also outshine iceberg lettuce. If you eat a variety of colorful greens you will have a tasty and nutritious salad. A good formula for building a salad is to toss together at least three different kinds of greens.
