Do you ever have trouble coming up with an idea for lunch or supper? Want to serve something nutritious? Many people become overwhelmed when they think of menu planning and trying to prepare healthy, cost effective meals for their families. Texas AgriLife Extension’s answer to this is the Dinner Tonight program. Each week an email is sent with a link to a short video. In the short 5-6 minutes video a county extension agent prepares a quicknutritious dish. The recipe is on the website. Whether you are a new or experienced cook, the video is fun to watch and gives you a quick idea on what to prepare for dinner. You can also watch other Dinner Tonight videos if you need another idea. Call the San Saba County Extension Office at 325-372-5416 or email cl-mcdowell@tamu.edu if you would like to receive the Dinner Tonight email.This week’s recipe is Potato Corn Chowder:1 teaspoon olive or vegetable oil 1 cup onion, chopped1 clove garlic, minced2 cups frozen corn5 Tablespoons all purpose flour 4 cups fat-free milk2 teaspoons dry mustard 1/4 teaspoon dried thymeBlack pepper to taste 4 cups diced potatoes5 Tablespoons shredded reduced-fat cheddar cheeseIn a non-stick skillet over medium high heat, sauté onion and garlic in oil until golden brown, about 2-3 minutes. In a bowl, combine milk, flour, mustard, andthyme; mix well.Add potatoes and corn to the skillet, then the milk mixture and black pepper. Stir until mixture comes to a boil and thickens. Reduce the heat to a simmer and cook until the potatoes are tender, about 10-15 minutes. Stir frequently to keep the mixture fromburning. Divide soup into 4 bowls topping each with about 1 Tablespoon of shredded cheese. Serves: 4.
