A cooking school called Cooking Well with Diabetes is scheduled for the first 2 Saturdays in December from 9 a.m. to 1 p.m. in the County Annex Conference Room at 409 S. Pecan Street, Lampasas. This is just in time to make sure you are cooking nutritious foods that everyone in the family will enjoy. The class fee is $35 per person or $50 per couple with scholarships available for the income eligible. Class size will be a minimum of 6 and maximum of the first 20. Recipes will be demonstrated and shared so lunch will be served at each session. This lesson focuses on how to select and prepare foods in a way that will help a person better manage blood glucose levels and maintain overall health. It highlights carbohydrate foods and includes instruction on how to prepare them with and without nonnutritive or artificial sweeteners. Lesson 2: Making Recipes without Fat Better for You. In this lesson, the class will explore the different sources of fats and learn how to detect them in the foods we buy and prepare. Participants will learn more about food preparation methods to help reduce fat while maintaining the good taste we remember from days past. Also covered are smart cooking, fat substitutions and main-dish recipes to replace some of those high-fat favorites. Lesson 3: Double-Pleasure Side Dishes: Reducing Sodium and Increasing Fiber. This lesson focuses on ways to reduce sodium and increase fiber while maintaining flavor and overall satisfaction in our meals. The foods prepared will be side-dish recipes to show how easy it is to make them delicious as well as nutritious. Lesson 4: Diabetes Reunion: Celebrating Sensibly with Diabetes. Lesson 4 will cover planning meals for a special occasion, reviewing the Plate Method of meal planning, modifying some of those family favorites to make them more healthful and resisting temptations at special events. Other important focuses will be the participants’ sharing of their success stories about diabetes cooking, tips on altering recipes for good health and discussions of their ongoing needs.Educational program by the Texas AgriLife Extension Service are open to all people without regard to race, color, sex, disability, religion, age or national origin.
